Take a booking by phone or WhatsApp with the name, mobile, guests and time, and hold a table for it: the list only offers tables that seat the party and are free then, so two bookings never land on one table. When the tables are full, add each party at the door with the wait you told them and watch the minutes; tell them on WhatsApp when their table is ready and seat them at a free table that fits. Late bookings, no-shows and the average wait show for the day, and the restaurant POS marks the tables booked within the hour.
