Carcass breakdowns
A carcass cut into halves, quarters or cuts. Its cost is shared over the cuts, by their sales value (a kilo of chops carries more than a kilo of neck) or by weight, and each cut's kilos come into stock at its new cost per kg while the carcass's kilos go out. What the cuts and the thrown-away waste do not account for is the shrink. Part of the Carcass costing add-on.
Steps
- Press "Break down" on a carcass in stock (or "Break down a carcass" here and pick it).
- Add each cut with its kilos; the price per kg is the product's selling price before VAT unless you write another. Write the bone, fat and trim thrown away as waste.
- The summary shows the yield, the waste, the shrink, the value at list prices and the expected profit as you type. Press "Post".
Tips
- The cost goes by sales value unless "Share carcass cost by weight" is on in the add-on's settings. The last cut takes the rounding remainder, so the shares add up to the carcass cost exactly.
- Cancelling a breakdown takes the cuts' kilos back out of stock and puts the carcass back in stock.
